Turkey



Should have posted this for the holidays but was lazy, so I didn't get around to making my leftover turkey for sandwiches til this past weekend, enjoy!

What you'll need:
  1. small bowl
  2. roasting pan
  3. instant read thermometer
  4. 1 Turkey (mine was just shy of 18 lbs)
  5. 3/4 cup olive oil
  6. 6 cloves garlic, minced
  7. 2 tablespoons rosemary
  8. 2 tablespoons basil
  9. 1 tablespoon Italian seasoning
  10. 1 teaspoon black pepper
  11. 1 teaspoon kosher salt
Instructions:
  1. Preheat the oven to 325°.
  2. Mix the olive oil, garlic, rosemary, basil, Italian seasoning, black pepper and salt in the small bowl.
  3. Rinse the turkey, pat dry and place in the roasting pan.
  4. Loosen the skin from the breast.
  5. Dump about half the mixture between the skin and the breast and spread it around covering as much of the bird as you can.
  6. Use the last half of the mixture on the outside of the turkey and rub across the entire bird.
  7. Place into the oven and cook for 3.5 - 4 hours, til instant read thermometer reads 180 when inserted into the thigh (took mine about 3:45)
  8. Eat up!

be sure to get under the skin,
try to avoid peeling it all off and wearing it like a face,
don't forget the heart, liver and gizzards
oh baby
I'll be eating turkey sammiches 3 x's a day for a week,
and I'm ok with that
