Pineapple Mandarin Chicken Wraps



Another Wednesday and with it comes another new episode of Psych! So tonight's recipe brings with it the great and mighty pineapple.

Pineapple Mandarin Chicken Wraps

Time to make Lunch and Dinner for the week.




What you'll need:
  1. 3 Boneless Skinless Chicken Breasts, cooked and cut into cubes
  2. About 10 Medium Wheat Tortillas
  3. 8 ounce package Cream Cheese, room temperature
  4. 8 ounce can Pineapple Chunks, drained
  5. 8 ounce can Mandarin Oranges, drained
  6. 3 Green Onions, chopped
  7. 1/4 Red Bell Pepper Chopped
  8. 1/4 Orange Bell Pepper Chopped
  9. 1/4 Yellow Bell Pepper Chopped
  10. Salted Cashews
  11. Spinach
  12. Carrot Matchsticks
  13. Salt and Pepper

Instructions:
  1. Season Chicken with Salt and Pepper and cook in broiler for 15 minutes then flip and cook for another 10 minutes. Chicken is done when internal temp hits 165°.
  2. Remove Chicken and set aside to cool.
  3. Once cool cut chicken into cubes.
  4. Spread Cream Cheese onto Wheat Tortillas.
  5. Place a thin layer of Spinach over half of the wrap. (only fill about half the wrap so there is room to roll it later)
  6. Place a handful of chicken over the spinach.
  7. Top with a few Bell Peppers, Green Onions, Pineapple Chunks, Mandarin Oranges, Carrot Matchsticks and Cashews.
  8. Fold the left and right side of the wrap over slightly and bring the edge of the wrap (with food) up and over the food to the open end, wrap tightly.
  9. Place on a piece of plastic wrap and roll tightly.
  10. Place in refrigerator until ready to eat.
  11. Makes about 10.


Yeh yeh, I said 3 in the ingredients, ignore the other 2
Spreading the Cream Cheese is the biggest pain in the ass
