Cinnamon Pumpkin Roll with Almond Cream Filling

MOAR CINNAMONS!!!! Also new Psych night, shit yeh, I fucked this recipe up while making it, forgot the pre roll refrigerate and cool so mine cracked, I did add the correct steps to the recipe tho so if you follow along you should be fine, I recommend keeping the booze intake to a minimum tho.

Cinnamon Pumpkin Roll with Almond Cream Filling


What you'll need for Roll:
  1. 9 x 13 Cookie Sheet
  2. Parchment Paper
  3. Towel
  4. Large Bowl
  5. 3/4 Cup Flour
  6. 1 Cup Sugar
  7. 1 Teaspoon Baking Soda
  8. 1/2 Teaspoon Pumpkin Pie Spice
  9. 1 Tablespoon Cinnamon
  10. 1 Cup Pumpkin Puree
  11. 3 Eggs
  12. 1 Teaspoon Lemon Juice
  13. 2 Tablespoons Confectioners Sugar
What you'll need for Filling:
  1. Medium Bowl
  2. 8 Ounce Package Cream Cheese, softened
  3. 1/4 Cup Butter
  4. 1 Teaspoon Almond Extract
  5. 1 Cup Confectioners Sugar
Instructions for Roll:
  1. Preheat the Oven to 375°.
  2. Place parchment paper on bottom of cookie sheet and grease the sides.
  3. In large bowl, mix flour, sugar, baking soda, cinnamon and pumpkin pie spice.
  4. Stir in pumpkin, eggs and lemon juice.
  5. Pour mixture into cookie sheet lined with parchment paper.
  6. Spread mixture evenly.
  7. Bake for 15 minutes.
  8. Lay towel down and sprinkle it with confectioners sugar.
  9. Turn the cake out onto the towel.
  10. Roll the towel up with the cake in it. (I forgot this step while making this, I was drinking heavily, don't judge!)
  11. Place in Fridge and allow to cool for 20 minutes. (Make filling while waiting, recipe below)
  12. Once cooled, unroll it and spread filling.
  13. Once the filling is evenly spread, re roll up the cake and wrap in aluminum foil.
  14. Place in refrigerator until ready to eat.
Instructions for Filling:
  1. In a medium bowl, mix cream cheese, butter, almond extract and sugar.
  2. Set aside until step 12 above.

Sugar Spice Mix? Check
Wet gooey stuff? Check.

on the upside, the beer was delicious
Still tastes awesome, just don't drink as heavily
while you're cooking and you'll be good to go
