Tomato Basil & Mozzarella Baguettes

It's Thursday, new recipe time.

Tomato Basil & Mozzarella Baguettes

appetizer whipped up to get rid of some leftovers



What You'll Need:
  1. French Baguette cut into half inch slices (I had about a half of a loaf left which came out to 16 slices about a half inch thick)
  2. small bowl
  3. 2.5 tablespoons butter, softened
  4. 2 cloves of garlic chopped
  5. half teaspoon olive oil
  6. salt & pepper to taste
  7. 1 teaspoons oregano
  8. Fresh Basil, chopped
  9. Mozzarella Cheese, 16 slices about 1/8 inch thick
  10. 3 plumb tomatoes cut into 1/4 inch slices "makes about 16"
Instructions for garlic spread:
  1. In bowl mix the butter, garlic, olive oil, oregano, salt & pepper.
  2. Spread onto each baguette slice.
Instructions for baguettes:
  1. Set broiler on Oven to Low.
  2. Place Baguettes with the garlic butter spread on a baking sheet or pizza tray.
  3. Bake in the oven for about 4 minutes(the edges should just begin to brown)
  4. Remove from oven
  5. Add 1 slice of tomato to each baguette.
  6. Add 1 slice of mozzarella to each baguette.
  7. Place back into the oven and bake for another 4 - 5 minutes (cheese is fully melted)
  8. Remove from oven
  9. Add a pinch of basil to each baguette.
  10. Eat!

Ignore that slice of bread at the top, he's just there to use up that extra spread and go into my belly
