Pumpkin Pancakes

Tuesday after the holiday, so it feels more like a Monday, fuck Mondays, today we have

Pumpkin Pancakes

It's not fall yet but the last few days had that fall feeling about them.



What You'll Need:
  1. 2 medium bowls
  2. Griddle or Frying pan
  3. 1.5 cups milk
  4. 1 cup pumpkin puree
  5. 1 teaspoon vanilla extract
  6. 1 egg
  7. 2 tablespoons vegetable oil
  8. 2 tablespoons white vinegar
  9. 2 cups flour
  10. 3 tablespoons brown sugar
  11. 2 teaspoons baking powder
  12. 1 teaspoon baking soda
  13. 1 teaspoon ground allspice
  14. 1 teaspoon ground cinnamon
  15. 1/2 teaspoon ground ginger
  16. 1/2 teaspoon salt
Instructions:
  1. In first bowl mix the milk, pumpkin, vanilla, egg, oil and vinegar.
  2. In second bowl mix the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt.
  3. Add the flour/spice mix to the pumpkin mixture and lightly combine.
  4. Add 1 tablespoon oil to the griddle or frying pan over medium high heat and coat.
  5. Pour the batter onto the griddle 1/4 cup per pancake.
  6. Brown on both sides and remove to plate. 
  7. Eat!

3 at a time, makes about 12, mileage will vary depending on size of pan and how large you make your cakes.
just add butter and syrup, now you may eat so you can get back to what's important...drinking.
