MOAR CINNAMONS!!!! Also new Psych night, shit yeh, I fucked this recipe up while making it, forgot the pre roll refrigerate and cool so mine cracked, I did add the correct steps to the recipe tho so if you follow along you should be fine, I recommend keeping the booze intake to a minimum tho.
Cinnamon Pumpkin Roll with Almond Cream Filling

What
you'll need for Roll:
- 9 x 13 Cookie Sheet
- Parchment Paper
- Towel
- Large Bowl
- 3/4 Cup Flour
- 1 Cup Sugar
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Pumpkin Pie Spice
- 1 Tablespoon Cinnamon
- 1 Cup Pumpkin Puree
- 3 Eggs
- 1 Teaspoon Lemon Juice
- 2 Tablespoons Confectioners Sugar
What
you'll need for Filling:
- Medium Bowl
- 8 Ounce Package Cream Cheese, softened
- 1/4 Cup Butter
- 1 Teaspoon Almond Extract
- 1 Cup Confectioners Sugar
Instructions for Roll:
- Preheat the Oven to 375°.
- Place parchment paper on bottom of cookie sheet and grease the sides.
- In large bowl, mix flour, sugar, baking soda, cinnamon and pumpkin pie spice.
- Stir in pumpkin, eggs and lemon juice.
- Pour mixture into cookie sheet lined with parchment paper.
- Spread mixture evenly.
- Bake for 15 minutes.
- Lay towel down and sprinkle it with confectioners sugar.
- Turn the cake out onto the towel.
- Roll the towel up with the cake in it. (I forgot this step while making this, I was drinking heavily, don't judge!)
- Place in Fridge and allow to cool for 20 minutes. (Make filling while waiting, recipe below)
- Once cooled, unroll it and spread filling.
- Once the filling is evenly spread, re roll up the cake and wrap in aluminum foil.
- Place in refrigerator until ready to eat.
Instructions for Filling:
- In a medium bowl, mix cream cheese, butter, almond extract and sugar.
- Set aside until step 12 above.
