What
you'll need: Large Slow Cooker (I use a 6 quart), 1lb boneless skinless chicken breasts (cut into strips or cubes), 1lb spicy or hot sausage sliced, 1lb shrimp (tails removed), 2 cans 14.5 oz diced tomatoes (I use Hunt's Spicy Red Pepper), 1 large onion chopped, 1 green bell pepper chopped, 1 red bell pepper chopped, 1 cup celery chopped, 1 cup chicken broth, 2 teaspoons oregano, 2 teaspoons parsley, 2 teaspoons cajun seasoning, 2 teaspoons cayenne pepper, 1/2 teaspoon thyme and 2 cups of white rice.
Instructions:
- Add the cubed chicken, sliced sausage, onion, green and red bell pepper, tomatoes, celery, chicken broth, oregano, parsley, cajun seasoning, cayenne and thyme to the slow cooker and mix.
- Set slow cooker to high and cover.
- Allow to cook for 3.5 hours stirring occasionally.
- Remove lid and add shrimp and 2 cups of white rice and mix well.
- Cover and allow to cook for an additional 30 minutes.
- Eat up!
