Jambalaya

Sorry folks, no booze in this one.

Jambalaya

Hope your hungry, this makes a shit load.




What you'll need: Large Slow Cooker (I use a 6 quart), 1lb boneless skinless chicken breasts (cut into strips or cubes), 1lb spicy or hot sausage sliced, 1lb shrimp (tails removed), 2 cans 14.5 oz diced tomatoes (I use Hunt's Spicy Red Pepper), 1 large onion chopped, 1 green bell pepper chopped, 1 red bell pepper chopped, 1 cup celery chopped, 1 cup chicken broth, 2 teaspoons oregano, 2 teaspoons parsley, 2 teaspoons cajun seasoning, 2 teaspoons cayenne pepper, 1/2 teaspoon thyme and 2 cups of white rice.

Instructions:
  1. Add the cubed chicken, sliced sausage, onion, green and red bell pepper, tomatoes, celery, chicken broth, oregano, parsley, cajun seasoning, cayenne and thyme to the slow cooker and mix.
  2. Set slow cooker to high and cover.
  3. Allow to cook for 3.5 hours stirring occasionally.
  4. Remove lid and add shrimp and 2 cups of white rice and mix well.
  5. Cover and allow to cook for an additional 30 minutes.
  6. Eat up!
Veggies...don't be afraid, the meat is coming.

Unless your feeding 4 + people, this should last all week.
