Holy shit, my 100th post, that's 99 more than I ever expected to do. To my 2 readers, thanks for sticking around, to my non readers, start reading. Anyways, it's Wednesday and Psych is still back, so having another Psych recipe for today, also if you still haven't seen it, you should be ashamed of yourself, and your family.
This is a lengthy one but oh so full of delicious heart stopping flavor. Enjoy.

A hired assassin. No, two of them actually. Yes, you see, that has to be
it. The night before, I went to this restaurant to get a basket of
these things called Fries Cuatro Quesos Dos Fritos. You know, the ones
where they inject potatoes with a four cheese mixture, fry them three
quarters of the way, pull them out, batter them, fry them again, and
then serve them with bacon and an ancho chili sour cream. Anyway, as I
was sitting there, a car speeds right through the storefront across the
street. It makes such a loud noise, I had to turn my head and look and
that is when I overheard the guy with the curly-Q's on his face tell the
other guy at the corner table about the assassination plot.

Can this be true?
Burton 'Gus' Guster:
No way.
Shawn Spencer:
I mean, is it even possible?
Burton 'Gus' Guster:
I couldn't imagine it.
Shawn Spencer:
There's no way you can prepare a fry like that. That'd be way too much for the human palate to manage.
Burton 'Gus' Guster:
It would be a flavor seizure.
Quatro Queso Dos Fritos

What
you'll need for Quatro Queso Dos Fritos:
- Deep Fryer or Large Pot for frying
- 1 Quart of Peanut Oil
- 8 - 12 small potatoes
- Kosher Salt
- Shredded Mexican 4 Cheese Blend
- Tooth Picks
- Beer Batter (recipe below)
- Panko Bread Crumbs
- Bacon Chili Sour Cream (recipe below)

Instructions for Quatro Queso Dos Fritos:
- Heat oil to 375°.
- Cut Potatoes in half.
- Cut the center out of each potato half
(I used a grapefruit spoon)
- Sprinkle Centers with Kosher Salt.
- Stuff with 4 Cheese blend.
- Put potatoes back together and secure with 4 toothpicks.
- Place into oil and fry for 8 minutes. (I fried them 4 at a time)
- Remove and allow to cool.
- Once Cool, cover in batter then coat in bread crumbs.
- Put back into fryer and fry for 2 - 4 minutes, until golden brown.
- Dip those suckers in the Sour Cream mix and enjoy!

What
you'll need for Beer Batter:
- Medium bowl
- 4 ounces Flour
- 1/2 Teaspoon Salt
- 1 Teaspoon Curry Powder
- 1/2 Teaspoon Cumin
- 1 Tablespoon Olive Oil
- 2/3 cup of beer
- 1 egg

Instructions for Beer Batter:
- Put all ingredients into bowl and whisk until well combined.
- Set aside until step 9 above.

What
you'll need for Bacon Chili Sour Cream:
- Medium Bowl
- 8 ounces Sour Cream
- 2 Green Onions sliced
- 1/2 Teaspoon Cayenne Pepper
- 4 slices of Bacon, Cooked and Crumbled

Instructions for Beer Batter:
- Put all ingredients into bowl and mix well.
- Top with extra crumbled bacon for garnish.
- Set aside until step 11 above.
