Should have posted this for the holidays but was lazy, so I didn't get around to making my leftover turkey for sandwiches til this past weekend, enjoy!

What you'll need:
- small bowl
- roasting pan
- instant read thermometer
- 1 Turkey (mine was just shy of 18 lbs)
- 3/4 cup olive oil
- 6 cloves garlic, minced
- 2 tablespoons rosemary
- 2 tablespoons basil
- 1 tablespoon Italian seasoning
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- Preheat the oven to 325°.
- Mix the olive oil, garlic, rosemary, basil, Italian seasoning, black pepper and salt in the small bowl.
- Rinse the turkey, pat dry and place in the roasting pan.
- Loosen the skin from the breast.
- Dump about half the mixture between the skin and the breast and spread it around covering as much of the bird as you can.
- Use the last half of the mixture on the outside of the turkey and rub across the entire bird.
- Place into the oven and cook for 3.5 - 4 hours, til instant read thermometer reads 180 when inserted into the thigh (took mine about 3:45)
- Eat up!
