Now that Psych is over my posts are no longer Wednesday required and or pineapple/cinnamon/psych related, however because Arrested Development came back, have another one for that show.
Cornballs
What
you'll need:
- 3/4 Cup Corn
- 1 Tablespoon Flour
- 2 Tablespoons Butter
- 1/2 Cup Milk
- 1/4 Cup Shredded Cheddar Cheese
- 1/4 Teaspoon Ancho Chili Powder
- 1/4 Teaspoon Cayenne
- Salt & Pepper to Taste
- 3 bowls
- 1/4 cup Flour
- 1 Egg Beaten
- 1 Cup Panko Bread Crumbs
- Optional for Dipping Sauce (2 Tablespoons Mayo, 1.5 Tablespoons Sriracha, 1 Tablespoon Ketchup)
Instructions:
- Heat butter in a pan, add 1 tablespoon of flour, mix, add milk, stir til thick.
- Once thick, remove from heat and allow to cool.
- Add Corn, Salt, Pepper, Cayenne, and Ancho Chili Powder, Mix.
- Add Shredded Cheddar, Mix.
- Allow to Cool. (I put in freeze until I could shape into a ball, 20 - 30 minutes)
- Place separately in 3 bowls and place side by side, 1/4 cup flour, 1 beaten egg and 1 cup bread crumbs.
- Coat each cornball with flour, then egg, then bread crumbs.
- Deep fry at 375° until golden brown.
- Eat Up and watch Arrested Development.
- Optional: If you would like a dipping sauce, mix 2 tablespoons Mayo, 1.5 Tablespoons Sriracha and 1 Tablespoon Ketchup, ta da, dipping sauce!
