Weekend is right around the corner, still cold out and snow and freezing rain is expected. Warm up with a large batch of something hot and spicy.
Chipotle Chicken Corn Chowder

What
you'll need:
- Slow Cooker
- 6 Cloves of Garlic, minced
- 1 Large Onion, diced
- 1 Red Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 3 Celery Stalks, diced
- 2 cups Carrot, matchsticks
- 1 cup Cherry Tomatoes, quartered
- 3 Red Potatoes, peeled and cut into small cubes
- 1.5 lbs Boneless Skinless Chicken Breasts, cut into cubes
- 15.5 oz Golden Corn Kernels, drained
- 2 Chipotle Chiles in Adobo Sauce, minced
- 3 teaspoons Adobo Chili Sauce
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Cayenne
- 3 cups Chicken Broth
- 1 cup Shredded Cheddar Cheese
- 1 cup Heavy Cream
- Cilantro
Instructions:
- Throw the Garlic, Onion, Red Bell Pepper, Green Bell Pepper, Celery Stalks, Carrots, Tomatoes, Potatoes, Chicken, Corn, Chipotle Chiles and Sauce, Salt, Pepper, Cayenne and Chicken Broth into the crock pot
and mix.
- Cook on High for 4 hours stirring occasionally.
- Add Shredded Cheddar and Heavy Cream, Mix.
- Cook on low for 30 minutes, stirring occasionally.
- Garnish with Cilantro.
- Eat up!
