Happy Tuesday, another twofer day, sometime tonight gets the 31 days of Halloween sketch, until then, enjoy a new recipe.
Pumpkin Bread

What
you'll need for Cinnamon Sugar Butter:
- 5 tablespoons of butter
- 2 teaspoons sugar
- 1 teaspoon cinnamon
What
you'll need for Bread:
- Oven
- 3 loaf pans 7 x 3
- large, medium and small bowls
- 15 ounce can pumpkin puree
- 1/2 cup Vegetable Oil
- 1/2 cup Apple Sauce
- Splash Vanilla Extract
- Splash Almond Extract
- 4 eggs
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/4 teaspoon ginger
- 1 cup chopped pecans
Instructions for Cinnamon Sugar Butter:
- In a small bowl, melt butter in microwave.
- Add Sugar and Cinnamon.
- Mix Well.
- Set aside.
Instructions for Bread:
- Preheat oven to 350°.
- Grease and flour three 7x3 loaf pans.
- In the large bowl, mix together
pumpkin puree, eggs, oil, apple sauce, water, sugar, vanilla extract and almond extract until blended.
- In the medium bowl, mix together the flour, baking soda, salt, cinnamon,
nutmeg, cloves, ginger and pecans.
- Stir the dry ingredients into the pumpkin
mixture until blended.
- Pour into the loaf pans.
- Bake for 50 - 70 minutes in preheated oven. (start checking around 50, I've had this finish as low as 50 and as high as 70 so far, not sure what causes so much of a time difference)
- Bread is done when wooden skewer is inserted into center and comes out clean.
- Poke holes in bread. (I do 10 per loaf, 5 on each side.)
- Drizzle Cinnamon sugar butter into each of the holes.
- Drizzle remaining cinnamon sugar butter across the top of the loaves.
- Enjoy!
