Chipotle Chicken Corn Chowder


Weekend is right around the corner, still cold out and snow and freezing rain is expected. Warm up with a large batch of something hot and spicy.

Chipotle Chicken Corn Chowder

Yeh, there's a lot of shit, but it's fairly easy




What you'll need:
  1. Slow Cooker
  2. 6 Cloves of Garlic, minced
  3. 1 Large Onion, diced
  4. 1 Red Bell Pepper, diced
  5. 1 Green Bell Pepper, diced
  6. 3 Celery Stalks, diced
  7. 2 cups Carrot, matchsticks
  8. 1 cup Cherry Tomatoes, quartered
  9. 3 Red Potatoes, peeled and cut into small cubes
  10. 1.5 lbs Boneless Skinless Chicken Breasts, cut into cubes
  11. 15.5 oz Golden Corn Kernels, drained
  12. 2 Chipotle Chiles in Adobo Sauce, minced
  13. 3 teaspoons Adobo Chili Sauce
  14. 1 teaspoon Kosher Salt
  15. 1 teaspoon Black Pepper
  16. 1 teaspoon Cayenne
  17. 3 cups Chicken Broth
  18. 1 cup Shredded Cheddar Cheese
  19. 1 cup Heavy Cream
  20. Cilantro
Instructions:
  1. Throw the Garlic, Onion, Red Bell Pepper, Green Bell Pepper, Celery Stalks, Carrots, Tomatoes, Potatoes, Chicken, Corn, Chipotle Chiles and Sauce, Salt, Pepper, Cayenne and Chicken Broth into the crock pot and mix.
  2. Cook on High for 4 hours stirring occasionally.
  3. Add Shredded Cheddar and Heavy Cream, Mix.
  4. Cook on low for 30 minutes, stirring occasionally.
  5. Garnish with Cilantro.
  6. Eat up!
Hard part is done, now comes the wait,
grab a beer, or 12 and watch some tv
Cream and Cheese added....30 minutes to go
