Happy Thursday! Still sick, so made a pie, Strap in and enjoy.
Strawberry Cream Pie

What
you'll need for Pie:
- Medium Saucepan
- Small Bowl
- Large bowl
- 9 inch pie pan
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/4 cup butter
- 2 tablespoons cornstarch
- 2 tablespoons milk
- 1 teaspoons vanilla extract
- 1.5 lbs Strawberries, sliced
- 1/2 cup Sugar
- 1 tablespoon Cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 package double pie crust
What
you'll need for Glaze Topping:
- 1/2 cup confectioners sugar
- 1 tablespoons milk
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon cinnamon
- 1 tablespoons butter, softened
Instructions for Pie:
- Preheat Oven to 400°.
- Add 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup
butter to a medium saucepan.
- Heat on medium until butter is melted, stirring regularly.
- In a small
bowl, mix together 2 tablespoons cornstarch, 2 tablespoons milk, and 1 teaspoons vanilla.
- Add to saucepan and mix.
- Cook until thick, stirring constantly.
- Remove
from heat, and set aside to cool.
- In a large bowl, combine the strawberries, 1/2 cup sugar, 1 tablespoon cornstarch, 1/4 teaspoon salt and 1/2 teaspoon cinnamon.
- Mix well.
- Line the pie pan with pie
dough.
- Pour custard filling mixture evenly into lined pie pan.
- Arrange strawberry mixture evenly over custard filling.
- Top with second crust, I use the lattice top, do however you like.
- Bake for 30 to 40 minutes, or until crusts are golden brown.
- Cool for at least 30 minutes.
- Drizzle Glaze topping over pie (instructions for glaze below)
- Refrigerate for 1.5 - 2 hours.
- Eat up!
Instructions for Glaze Topping:
- In small bowl, combine 1/2 cup confectioners sugar, 1 tablespoons milk, 1/4 teaspoon vanilla, 1/8 teaspoon cinnamon and 1
tablespoon softened butter.
- Blend until smooth.
- Drizzle evenly over warm
