Tuesday after the holiday, so it feels more like a Monday, fuck Mondays, today we have
Pumpkin Pancakes

It's not fall yet but the last few days had that fall feeling about them. |
What You'll Need:
- 2 medium bowls
- Griddle or Frying pan
- 1.5 cups milk

1 cup pumpkin puree
- 1 teaspoon vanilla extract
-
1 egg
-
2 tablespoons vegetable oil
-
2 tablespoons white vinegar
-
2 cups flour
-
3 tablespoons brown sugar
-
2 teaspoons baking powder
-
1 teaspoon baking soda
-
1 teaspoon ground allspice
-
1 teaspoon ground cinnamon
-
1/2 teaspoon ground ginger
-
1/2 teaspoon salt
Instructions:
-
In first bowl mix the milk, pumpkin, vanilla, egg, oil
and vinegar.
- In second bowl mix the flour, brown sugar, baking powder, baking
soda, allspice, cinnamon, ginger and salt.
- Add the flour/spice mix to the pumpkin mixture and lightly combine.

Add 1 tablespoon oil to the griddle or frying pan over
medium high heat and coat.
- Pour the batter onto the griddle 1/4 cup per pancake.
- Brown on both sides and remove to plate.
- Eat!
